Pumpkin Pancakes

Ingredients

2 cups self rising flour

1 cup pumpkin purée

2 eggs

Cinnamon to taste
1 cup water


Instructions

Mix all ingredients.
Spray griddle or skillet with cookig spray
Use 1/4 Measuring cup and drop pancake batter onto a hot griddle or skillet
Cook for 3-4 minutes or until the edges look dry
Flip and cook for another 1-2 minutes
Serve hot

 

Notes

I served my pancakes with fat-free Reddi whip and sugar-free pancake syrup for 0 added smart points!
Since it made so many pancakes it was great for leftover lunches the next day!
