How to make sheet pan pancakes

To make sheet pan pancakes you of course start with a sheet pan or a cookie sheet and wait first preheat the oven 🙂 Now gather your ingredients. I like to get everything out and measured so when I am putting the recipe together it flows easier. Once I gather all of my ingredients I get my utensils out and I start mixing things up.

What toppings do I use for pancakes?

There are a ton of options here. You can strawberries and blueberries as pictured or banana slices. You can top pancakes with just about any fruit and create a delicious meal. I like to add walnuts and cinnamon to my batter sometimes to change things up. The nuts add healthy fats and cinnamon has its own healthy properties.

You can add powdered sugar and butter while the pancakes are hot to form a kind of glaze. You can drizzle on some caramel or chocolate sauce, spruce them up with mint leaves, and add a coffee or mint tea to drink.

What sides do I make with pancakes?

We serve our pancakes with turkey sausage or turkey bacon. For a real treat try the sausage veggie wrap with your pancakes. We cook our sausage and bacon with one or two sprays of olive oil spray in a skillet. You can also opt to put them in the oven alongside the pancakes they come out delicious and crispy. Besides the obvious bacon and sausage or fruit, we have had pancakes with scrambled eggs, chocolate chips, and even sweet potatoes. We have even tried them with a side of beets, by the way, stir-fried broccoli and fried green beans are both amazing when paired with pancakes.

What are some other sides for pancakes?

  • Nutella
  • Peanut butter (PB2)
  • Vanilla ice cream (Fat-free) (sugar-free) if you are watching your points 🙂
  • Different kinds of nuts (I prefer almonds and walnuts but go crazy)
  • Hot chocolate (I make mine with premier protein)
  • Teas ( I find black tea is better than green tea when served with pancakes) (I like them both)
  • Coffees
  • Just about everything you can think of will pair well 🙂 You can go savory or sweet and have a delicious treat.

Ingredients

2 T. mild-flavored extra virgin olive oil, divided
½ large ripe banana
1 c. rolled oats
1¼ c. unsweetened almond milk
1 T. pure maple syrup (Sugar-free) (+ more to serve)
1½ t. baking powder
1 t. pure vanilla extract
2 t. ground cinnamon
1½ c. blueberries, divided

Optional:

1 c. sliced strawberries, to serve


Instructions

Preheat your oven to 375°F and grease a small, rimmed baking sheet with a tablespoon of olive oil.
In a blender or a food processor, combine the remaining olive oil, banana, rolled oats, almond milk, maple syrup, baking powder, vanilla extract, and cinnamon.
Blend until thick and smooth.

Pour the pancake batter onto the greased sheet pan and top with one cup of the blueberries.
Place in the preheated oven and bake until the batter is set in the center, slightly puffed up, and golden brown around the edges, approximately 20-25 minutes.
Remove from oven and cool for 10-15 minutes before slicing.
Slice into 4 squares
Serve immediately with additional maple syrup, the remaining blueberries, and fresh, sliced strawberries, if desired.

Notes

I used an 8×8 cake pan which increased the baking time by 3 minutes. A smaller cookie sheet with an edge is ideal as the batter will spread out a little more. Cooking times will vary check center with a  toothpick.
