Apple Crisp Cookie Cups

Its apples and pumpkin time 🙂 Oh yeah and lots of cinnamon. Are you getting ready for fall? My Apple Crisp Cookie Cups are sure to brighten up your table. The kids will eat all of their veggies in anticipation of getting their hands on one of these delectable cups. When you are baking them they smell up the house with warm sweet apples and cinnamon it begins to smell like home. When I was a kid my mom would start baking on Saturday mornings and the house would smell delicious for hours and sometimes days. I remember one evening, after being at the park all day, (I loved to play basketball) coming home to the smell of fresh-baked apple pie, and sugar cookies. MMMM.

Easy Apple Pie Cookie Cups

When I was younger my mom also gave me a Betty Crocker cookbook. This was my first cookbook and I tried to make everything in there. One of my favorite desserts was Easy Apple Pie Cookie Cups. At the time I was about 7 and loved cooking, but I did not like baking because it took to long. Short attention span here lol. Today I still love cooking and I have a little longer attention span. I still love making these little cups and now I have figured out a way to make them Weight Watchers friendly, Low in points and still oh so delicious.

I made this recipe Weight Watcher's friendly by substituting the sugar for Stevia. You can use any sugar substitute you like the best. Another way to make this recipe even more Weight Watchers Freestyle friendly is to use no sugar added apple sauce in place of the apple pie filling. I love seeing the smiles on the faces of my wife and daughters when these come out of the oven. I will make these in the Ninja Foodi in the future and let you know how they come out.

I used scissors to cut them approximately 1/2 inch. I then cut them in half for the mini cups.
I tried to get them about even. Some are a bit smaller than others but I counted the points the same as the larger ones.

Description

An Easy Apple Crisp Cookie Cups Recipe


Ingredients

Scale

112-24 count mini muffin pan
1 package sugar cookie dough cut into twelve 1/2 inch slices or 24 1/4 inch slices (5 points per 1/2 inch slice) 

Cooking spray
1/2 cup Great Value apple pie filling   (2 points)
1 tablespoon cinnamon


Instructions

Preheat oven 375 degrees. Lightly spray a 12-24 mini muffin pan with cooking spray. Follow the instructions on the sugar cookie package for drop cookies.
Roll dough into small balls.
Place into muffin pan.
We used dough that was cut into each cookie size about 1/2 inch slice
For the mini pan I cut the 1/2 inch slice of cookie dough in half again.
We rolled each cookie into a ball.
Bake for 7 minutes.
Immediately remove from oven and press a shot glass into the cookie to make the opening.
If you are using a mini pan use a spoon to make the depression in the cookie.
Fill the cups with apple pie filling and top with cinnamon
Place back into the oven for 3 minutes to warm up the apple filling.
Let cool for 5-10 minutes
Remove from baking pan and enjoy. 


Notes

Substitute no sugar added apple sauce for the apple pie filling and you will save some points.:)

To make the cooling process quicker use baking cups. This allows you to remove the cups from the pan and let them cool on a cooling rack.

I did not use the entire package of cookie dough when I made these as  24 minis. I did use the entire package when making 12 regular size cookie crisps.

Quick tip; make the depression in the cookie dough before you cook them it is easier that way.
