It is finally pumpkin time again. I know you all call this season fall but I love pumpkin everything so for me its pumpkin time:) These chocolate pumpkin muffins combine the best of the season. With decadent chocolate cake and some pumpkin puree, you can create an amazing dessert.
How to make Chocolate Pumpkin Muffins
To make these delicious muffins only takes three ingredients and about 25 minutes. You will love the smell of these baking and will want to eat one as soon as they come out of the oven. Believe me I know.

Why do I add pumpkin to the muffins?
Adding pumpkin to the muffins has two different effects. Let's start out by saying my wife loved these muffins, and she loathes the taste and consistency of pumpkin. You can not taste the pumpkin in these at all. The first effect is the added nutrition. Ok, that's out of the way the best reason to add pumpkin is the muffins are super moist. Even a day later. The muffins will keep for up to a week in an airtight container on top of your fridge. (I don't think they will last that long though, they sure didn't in my house 🙂
What can I serve with pumpkin muffins?
I love to eat them when they are still warm with a glass of apple cider. You can opt to serve these delicious muffins with a scoop of ice cream on top. A dash of cinnamon and on top of the ice cream or just on the muffin itself is a great way to enjoy these. Did you know that pumpkin muffins pair well with a glass of sparkling wine? Who knew? Over at insolence and wine, they have paired different wines with different pumpkin dishes so you will know which tastes great no matter if you are having a pumpkin stew (grab a chardonnay) or these pumpkin muffins (an ice wine will pair nicely), They have you covered. CHOCOLATE PUMPKIN MUFFINS
- Total Time: 25 minutes
- Yield: 48 mini muffins/24 regular 1x
Ingredients
- 1 box cake mix
- 1 (15 oz) can pure pumpkin puree
- ½ cup semi-sweet chocolate chips (optional)
Instructions
Heat oven to 350°.
Line muffin tin with paper liners.
In a medium mixing bowl, mix cake mix and pumpkin puree until combined.
Add chocolate chips, if desired.
Using a spoon or cookie scoop (I highly recommend using a scoop!), add batter to muffin liners, filling ¾ full.
Bake mini muffins for approximately 16-18 minutes and regular muffins for approximately 22-24 minutes, or until a toothpick inserted into the center of the cupcake comes out clean.
Notes
Makes about 48 mini muffins or 24 regular sized muffins.
Using a chocolate cake mix will result in very chocolatey muffins (my wife has no idea there was pumpkin in them) My Aunt who like my wife does not care for pumpkin also loved them.
