Easy Cinnamon Rolls

We all have those cravings for something sweet. Sometimes it takes more than a banana or other fruit to satisfy that nagging sweet tooth. I remember waking up on Sunday mornings, and my mom making cinnamon rolls before church. The smell of those cinnamon rolls baking in the oven will always be one of my favorite childhood memories. As I have gotten older I have had to cut back on the sweets and the carbs. Recently in my search to find a healthy way to make cinnamon rolls I stumbled across a recipe that was close.

Now that we have a Ninja Foodi we rarely use the stove or the oven. I tweaked the recipe to make it Weight Watchers friendly and then got to experimenting with the Foodi to make the perfect cinnamon rolls. I loved getting the middle one when my mom was making them, the ooey-gooey soft middle one, that was my favorite. One of my friends, when we had a sleepover, liked the outside ones that were a little crispy on the edges. Everyone has their favorite. The Ninja Foodi makes the perfect cinnamon rolls every time just add time to make them a bit crispier or a little less for that ooey-gooey goodness. The time I use in the recipe makes them perfect so that the center is done but gooey and the outside ones are just a bit crispy just like mom used to make. I used too much flour when I rolled them out so use less. Practice makes you better right? I used 1/4 cup on the counter to roll them out, I would suggest sprinkling some flour on the counter and then rolling them out the outsides of the cinnamon rolls won't be flour-coated as much and will look better. They still tasted amazing 🙂

Cinnamon Cauliflower Casserole

I have tried and tried but I do not like cinnamon cauliflower bites. I made them with Cauliflower gnocchi from Trader Joe's, I have made them with cauliflower florets, riced cauliflower and for the life of me I do not like them enough to spend points on them. I wanted to make a cinnamon roll that was healthier but tasted great. Cauliflower was not the answer, but this recipe, in my opinion, is. Try it out and see if your tastebuds don't sing its praises 🙂

They look delicious, don't they? I made cinnamon rolls out of cauliflower gnocchi they weren't terrible, but (spoiler alert) they definitely weren't great.

Instructions

Pour powdered swerve sugar into a bowl Add Jordans syrup Mix well Drizzle on top of cinnamon rolls Enjoy

Description

Great tasting low point cinnamon rolls


Ingredients

Scale
  • 1 cup Kodiak pancake mix ( I used Kodiak Buttermilk)
  • 1/4 cup low-fat milk
  • 2 tablespoon swerve brown sugar
  • 1/2 tablespoon cinnamon

Instructions

  1. Press bake on the Ninja Foodi and preheat for 5 minutes to 350ºF.
  2. In a bowl, combine pancake mix and low-fat milk, until a dough forms.
  3. If the dough is dry, add 1/2 to 1 tablespoon additional milk.
  4. Dump the dough out onto a floured surface.
  5. Roll it into a long rectangle and top with low-calorie sweetener and cinnamon.
  6. Roll up and slice into 6 cinnamon rolls.
  7. Spray a baking dish with pan spray, place the rack in the lower position, put the baking dish on the rack and place in the Ninja Foodi.
  8. Press bake set to 350 close air crisping lid.
  9. Bake for 8-10 minutes (don't overbake). Check them at 8 minutes and bake longer if desired
  10. If overbaked they will taste VERY dry.
  11. Top with frosting/yogurt of your choice or just eat plain.

  1. Just made the Easy Cinnamon Rolls, with slight modifications. I used 1/4 c (+ a little extra to get dough to come together). The water came from plumping 1/4 c. raisins (in the micro for 30 secs.). Rolled out dough, spread the sugar and cinnamon on the dough, then the raisins. Rolled up and cut into 12 pieces to fit in my mini muffin pan. Baked at 350 for 8 minutes in the oven. Hubby said he likes them even though they are different than the ones I used to make. High praise from him! Thanks for the recipe!
